Method:
- Wash the duck tongue, blanch with water, ginger slice, spring onion and Chinese white wine.
- Rinse the duck tongue under cold water.
- Heat some oil, put in the garlic, purple garlic, onion, ginger and fry until the smell release, put in the Sichuan spicy sauce, XO sauce, then the duck tongue, mix well. Add dark soya sauce, oyster sauce, miro, water and a pitch of salt, turn to medium fire. Simmer until the water is thickened. Add red chilly, red oil optional.
- Keep in refrigerator for 1 day, ready to serve.
