Method:
- Clean the chicken, take out the fat (if any)
- Wipe the chicken with salt and wine, gently message and rest for at least 2 hours.
- Heat up the pot, add the chicken fat until oil released, (add oil if there is not enough), put in the ginger slices and spring onion, fry for 30 secs. Add in the chicken, slightly pan fry.
- Add the dark soya sauce, soya sauce, sugar cane, turn to small fire and cook until the chicken turned into brown color.
- Add in rock sugar and cook for 30 mins.
- Add sesame oil, ready to serve.
